Beef plate ribs are cut from the lower portion of the rib cage and have a nice thick layer of fat-laced meat on top of the bone. We then cut these plate ribs into 1/3" thick Korean style or Flanken Style short ribs. These are perfect for marinating and quickly grilling or slow cooking via the braising method.
Of all the beef produced in the U.S., only 2% is certified prime grade by the USDA.
